Pancake Day- The VELO way!

Tomorrow is Pancake Day! Its always a great excuse to have pancakes and so we asked a few of our riders for their top go to recipes.

Mike’s recipes:

My favourite pancakes are ‘easy’ pancakes… for me…

flour, 1 egg, melted butter, sugar, salt, baking power and milk in a blender until a smooth consistency and it makes a thin crepe like pancake. Then fill with sugar and lemon.

Another more healthy option but even easier is a couple of eggs, protein powder, banana and some baking powder . Whack that in a blender and fry up for a decent protein pancake. Smash some peanut butter on top!

Marc’s top tip (he is from Ireland):

Just put POTATOES on the pancake!

Will’s favourite topping:

Peanut Butter and Dark Choc spread combo for the win!

Jeremy’s recipe:

American pancakes for the win! Super fat thick pancakes with Blueberries in the mix. Top them with native maple syrup- non of that fake stuff!

Flour, baking powder, salt, sugar, eggs and milk and blueberries. If you feel adventurous cook some bacon on the side!

Chang’s recipe:

I’m a real pancake lover so I really go to town each year on pancake day! My favourite pancakes are made from a super tasty and simple blended batter of oats, oat milk, bananas, baking powder and Chia seeds. I will add some OTE soy protein powder into the mix as well if I’ve had a hard session prior to making them.

I also love to mix it up and have different toppings on two or three pancakes but my favourite tends to be the mix of PB2 (dehydrated peanut butter powder) and agave nectar! I also absolutely love to put vanilla/coconut yogurt with blueberries and raspberries- a very different but just as tasty flavour. Those are the two that I’ll most certainly be munching on pre and post training.

Gabby’s recipe:

American style pineapple and banana pancakes.

Delicious combo. Combine 100g pineapple, 1 banana, 100g self raising flour, 1tsp baking powder, 1tsp cinnamon, 3 tbsp light muscovado sugar, 1 egg, 100ml milk. Serve with greek yogurt and maple syrup. And of course bacon on the side is always a winner!
